Passing by the bakery window you get a rush of memories as the warm, sweet scent of “something special” is pulled fresh from the oven. But is it the anticipation of a treat for your tongue or the sweet memories attached to that warm pastry which cause you to pause and smile?

Blueberry Streusel Cake

Dough:

  • 1 cup Cottage Cheese
  • 6 Tbsp Milk
  • 1 Egg
  • 8 Tbsp Vegetable Oil
  • ½ cup Sugar
  • 1 tsp Vanilla
  • Pinch of Salt
  • 1 ¾ – 2 cups Flour
  • 4 tsp Baking Powder

 

Streusel Topping:

  • ¼ cup Butter, melted
  • 1.2 cup ounces Flour
  • ¼ cup ounces Sugar
  • ¼ tsp Cinnamon
