Ingredients:

  • 1 1/2 all-purpose flour
  • 1/2 cup almonds
  • 1/4c Oats
  • 2T Coconut Sugar
  • 1/2 tsp salt
  • 1pkg yeast
  • 1/3 cup organic milk, heated
  • 1 apple, shredded (about 1/2 cup)
  • 1 egg
  • 2T Butter (room temperature, good quality, unsalted and don’t use margarine!)

Filling:

  • 2T Butter, melted
  • ¼ cup Brown Sugar mixed with
  • 1 ½ Tbsp Cinnamon

Glaze:

  • 1 cup powdered sugar
  • 1 tsp Vanilla
  • ½ tsp Orange Zest
  • 2 Tbsp milk (more if needed)

This recipe has a lot of steps but is surprisingly simple to make. NOTE: you must allow 60-90 minutes to let the dough rise.

Cook’s Note: I used my Vitamix to blend the almonds and oats at the same time because when you do the almonds alone they get a little moist and stick….adding and processing the oats at the same time seemed to “unstick” it making it easier for everything to blend into a nice flour.

Add a healthy twist to an old favorite. Prepare your own fiber-rich flour using a mix of rolled oats. almonds and flour. Using shredded apples rather than a lot of butter (we still use a little) reduces the fat while still retaining a wonderful bread texture.

Step 1: For the dough, put dry ingredients in a mixing bowl:

  • 1 1/2 all-purpose flour
  • 1/2 cup almonds (use grinder, food processor or blender and blend down to a powder)
  • 1/4c Oats (grind down just like the almonds)
  • 2T Coconut Sugar
  • 1/2 tsp salt
  • 1pkg yeast

Step 2: Add wet ingredients to the bowl and combine (it will still be wet and a little sticky):

  • 1/3 cup organic milk, heated
  • 1 apple, shredded (about 1/2 cup)
  • 1 egg
  • 2T Butter (room temperature, good quality, unsalted and don’t use margarine!)

Step 3: Turn dough onto a floured board

Lightly knead the dough working in additional flour (about 1/4 – 1/2 cup). You want a dough that’sno longer sticky and bounces back a little when pressed with finger.

Let it rest about 10 minutes

Step 4: Roll out the dough

Flour a rolling pin and roll into a rectangler shape, not too thin. It will be about 16-18” on the long side

Step 5: Spread Filling onto Dough

Brush the dough with melted butter and then sprinkle the brown sugar/cinnamon mixture on top

  • 2T Butter, melted (brush this on the dough first)
  • ¼ cup Brown Sugar mixed with
  • 1 ½ Tbsp Cinnamon

Step 6: Roll up the dough (starting with the wider side) then slice into 1 1/2 – 2 inch slices

Place the pieces in a 6″ x 9″ baking dish and let rise 60-90 minutes until double in size

Step 7: Bake 375 degrees for 20-30 minutes

Step 8: Prepare Glaze and put over warm Cinnamon Rolls

Mix the following in a small bowl

  • 1 cup powdered sugar
  • 1 tsp Vanilla
  • ½ tsp Orange Zest
  • 2 Tbsp milk (more if needed)
