Gather Your Ingredients:
- 8oz Pork Loin Chops, Boneless (this is about 1)
Note: I used 2 in my recipe for 4 people…that’s about a pound
Marinade for the Pork:
- 1T Soy Sauce
- 1tsp Grated Ginger, Fresh
- 1 Clove Garlic, Crushed
Other Stuff:
- 2 cups Cooked Brown Rice
- 1 cup Nectarine, diced (this is about 1)
- 1 Nectarine (sliced)
NOTE: You’ll need 2 nectarines for this recipe
- ¼ cup Scallions, thinly sliced
- 1T Olive Oil
- 1T Lime Juice (the juice of 1 lime)
- ½ tsp Sesame Oil
- 8 oz Green Beans
- 4 cups Mixed Salad Greens
NOTE: I used Romaine Lettuce
- 12 slices of Cucumber (about ½ of a cucumber)
- 8 slices of Yellow Pepper (sliced thin)

You are in for a healthy and budget friendly treat with this Pork Loin Salad that is hearty enough to be the Main Meal. I was able to put this together for about $10.00 (yep…that’s just $2.50 per person). It’s amazing how satisfying healthy can be.

Who said that a Dinner Salad can’t be the main attraction? Match the best of summer Nectarines with marinated, Grilled Pork Loin Chops and the result is pure summer heaven. Easy, Healthy, and budget friendly.
Here’s What you Do:
Prep:
- Cook the rice according to the package directions.
- It takes about 45 minutes to cook so start this first. For 2 cups, you’ll use 2/3 cups of Rice and 1 ½ cups of Water
Step 1) Marinate the Pork
- In a small bowl, mix the Soy Sauce, Grated Ginger, and Crushed Garlic
- Put the Pork on a plate and rub the marinade on each side
- Cover the plate and place in the refrigerator for at least 30 minutes
Step 2) Slice Fruit and Vegetables for the Salad
- Cook the Green Beans in boiling water for about 3 minutes or until crisp tender. Remove from water and immediately rinse with cold water to stop the cooking (you don’t want them to be soggy)
- Chop 1 Nectarine and put in a bowl
- Slice the 2nd Nectarine
- Chop and Slice all the other vegetables
Step 3) Mix the Dressing
- In a small bowl, mix the Olive Oil, Lime Juice and Sesame Oil
- Set aside
Step 4) Cook the Pork
- NOTE: I prefer to grill the Pork
- If you’re not grilling, heat a not-stick frying pan over high heat.
- Add the pork and cook, brushing with any of the leftover liquid as it cooks
- Cook about 3 minutes per side
- Remove from the pan, place on a plate, and let cool slightly
- Once cooled, slice into thin, crosswise slices
If you’re grilling the pork: Grill over medium heat. Be sure to oil the rack before you place the Pork on to cook. You’ll cook for about 8 minutes on each side, or until a thermometer stuck in the thickest part reads at least 145 degrees F (63C)
Step 5) Mix the Rice
- Just before serving, combine the cooked Rice, chopped Nectarines, Scallions, Olive Oil, Lime Juice and Sesame Oil in a bowl
Step 6) Arrange Salad-Ready to Serve!
- Take out 4 Dinner-sized Plates
- Arrange equal amounts of lettuce on each plate (about ½ cup)
- Spoon the Rice Mixture on a mound in the center of the plate (1 Scoop per plate)
- Arrange sliced Pork on the edges of the plate
- Arrange Green Beans, Cucumber slices, Pepper slices and Nectarine Slices
- Serve!
