Ingredients:

  • 4 Salmon fillets
  • 2 Tbsp Honey
  • 2 Tbsp Dijon Mustard
  • 2 Tbsp Olive oil

I happily embrace any excuse to cook salmon. After living in Seattle for a while, and eating freshly caught salmon ‘right off the boat’ I have to admit, I’m a little spoiled. Choose wild caught, Alaskan salmon for the best quality and highest levels of Omega 3’s.

Directions

  • Mix the honey, mustard and olive oil together in a small bowl.
  • Brush onto the salmon fillets. You can either bake these right away, or put them in the refrigerator until you’re ready to bake.
  • To bake: Preheat oven to 400°.
  • Place salmon in a baking dish, place in oven, and bake for 10 minutes.

*see…I told you it was simple!

The American Heart Association recommends eating at least 2 servings of fish a week to get the heart health benefits of Omega-3’s which include:

1-Decreased triglyceride levels,

2-Slow growth rate of atherosclerotic plaque, and

3-Lower blood pressure (slightly) and decreased risk of arrhythmias (abnormal heartbeats), which can lead to sudden death.
